Antioxidants are compounds that protect body cells against damaging effects of reactive oxygen species (free radicals) such as singlet oxygen, superoxide and hydroxyl radicals generated by normal body metabolism, diseases, UV light, chemicals, nutrients & phytonutrients deficiency, heavy metals and toxins. Antioxidants function by preventing formation of reactive oxygen species or quench reactive oxygen species directly.

An imbalance between antioxidants and reactive oxygen species results in oxidative stress, leading to cellular damage.  Recent studies have demonstrated that reactive oxygen species accelerate oxidative deterioration of polyunsaturated fatty acids (lipids), protein, DNA, activation of procarcinogens, inhibition of cellular and antioxidant defense systems, and stress conditions. Reactive oxygen species have been implicated in nutritional disease conditions including, cancer, diabetes, arthritis, cardiovascular and many more.

Consumption of legumes, cereals, fruits, vegetables and aqua botanicals has been repeatedly demonstrated to prevent occurrence of a number of diseases. It is well documented that several plants contain potent compounds which exhibit antioxidant properties such as astaxanthin, omega series fatty acids, GLA, essential amino acids, carotene, flavonoids, phenols, sterols, squalene, zeaxanthin, phycocyanin, vitamins, trace minerals, enzymes SOD and catalase.

Study by Yasuhiro and others (2007) show that  astaxanthin is very effective in quenching singlet oxygen free radical compared with other common fat and water soluble antioxidants as shown above.

The anti aging antioxidant activity of astaxanthin  is 6000 times greater than vitamin C and 40 times greater than Beta-carotene.
